The first season is a little spotty. They were finding their feet.
Second and third seasons are pretty good, actually.
Fourth season was okay.
Since then it's been sliding. A few good moments, but a lot of forumla/running gags that just aren't that funny to begin with.
There's also a lot of the Andy Kaufman-style humour of "funny...okay, it's still goin...dear god make it stop...now I'm ticked off that this bit is still going on...okay I guess it's kinda funny again."
Yeah I watched an episode the other day where Peter started an organization for fat people and they showed the same room full of fat people for, like, 10 minutes of just burping and farting. Yeah, I could have done without that.
If you like your humor really obvious, you'll like Family Guy. It's good for some giggles, but I always feel a little ashamed of myself after I watch it.
I have to say, that I still watch Simps and enjoy it. I recognize that it's a clever, well-written show with characters I've loved for 20 years.
That said, Family Guy makes me laugh my ass off without fail. It's not as clever, is much more juvenile, and the jokes can be fairly random (as South Park estutely points out). Still, hilarious.
