Sounds good! I love making chicken tenders at home.
Two suggestions you might try in the future: 1) Panko breadcrumbs. I had chicken at Friday's that used them and it was really good--much lighter than traditional bread crumbs. 2) To up the spice factor--add hot sauce to the egg mixture before you dip the chicken. It adds an extra layer of flavor and it's tasty!
My suggestion: use Frank's Red Hot. It's the most authentic Buffalo sauce, as it's the original recipe from the Anchor Bar in Buffalo, NY. To me it's the ONLY choice for wings or fingers
