So I've got this ...idea.

I want to make a cold dish. Some might call it a salad.

Here's what I know I want in it. Rotini noodles, chunks of chicken breast that have been cooked and diced, olives.

I've had this idea in my head for a while now. I have no idea what to moisten it with, or what to add, or...anything.

Ideas?

Add capers, feta cheese, and a balsamic vinaigrette dressing. I call it "pasta salad" but have heard it called "noodle salad" as well. Use a small amount of dressing if you want it to be low-cal.

*you also may want to add artichoke hearts, sun dried tomatoes, or some kind of veggie -one of those frozen veggie packs with peas, corn, and carrots are quite good and so is broccoli.

you eat WAY different food than we do.

Oddly when I was thinking about this artichoke hearts ran through my head...not that I've ever eaten them. As did the sun dried tomatoes, those I have eaten.

Broccoli would work for us.

I had thought about doing a dressing to make it wet but I don't know what kind I'd use.

olive oil, balsamic vinaigrette, feta or asiago cheese.

yum.

Also, for protein, cocktail shrimp.

I make a pasta salad with rotini and shredded/cubed chicken regularly, but it's pretty basic. I do it similarly to tuna salad, in that I use mayo, celery salt, hunks of celery, salt and pepper, a bit of dijon mustard sometimes, a bit of caesar dressing if I have it, and generally I throw in frozen peas (that have been thawed). Olives are good in it, too.

Ohhhhh I'm so hungry. This was NOT what I needed to talk about!! ;)

See I think that's kind of what I was thinking. Though now I'm totally doing broccoli in it.

I'm a picky broccoli eater. I don't like stems unless they are tiny and I have to have small pieces. So I think that would work well.

A bit of caeser dressing might be exactly what is called for. Mayo seemed too bland and italian too...much.

feta cheese, greek salad dressing, and whatever chopped fresh veggies you have on hand (cucumber, tomato, broccoli, celery, whatever).

It's funny how many people have said feta cheese!

I wish I was one of those people who know intuitively what flavors will work together. I have been pondering tomato in this almost since I started thinking of it but I wasn't sure if it would work.
