does anyone have any experience with making their own tempeh, seitan, or gluten? i've been very disappointed with the quality of the tempeh available here (it's only frozen, and falls apart too easily, as opposed to the fresh stuff i was able to purchase in europe), and we can't get seitan or gluten in this end of the world. any fave recipes or ( Read more... )

I use a recipe that I found online. (Though it might originally be from a cookbook, because after I found it the first time, it was removed and I had a hard time finding another copy. I'd give credit if I could, but I don't know its origins.) It's technically for a pastrami-style loaf, and we do use it for cold sandwiches quite a bit, but it's just as good cut into larger, thicker pieces and cooked in hot dishes ( ... )

i'm in a small college town in maritime canada. i have a little nutritional yeast from the last time i was in a bigger city, and some bob mill's vital wheat gluten that i can purchase anytime.

To wash out the gluten, you need a pack of wheat flour and water, basically. And at least a night to let it sit, then you can wash it out. I only have a German "how to" guide to making seitan yourself, and have not yet found something similar in English.

However, if you have an Asian supermarket where you live, chances are they sell gluten (possibly canned), too.

i now live in a small college town where the asian supermarket only carries snack food for the international students (so if i ever have a craving for pocky sticks or ramen, i'm set), and where the health food store is violently against anything with gluten in it. :(

aber ich kann ein bischen deutsch, wenn sie ihr rezept mit mir teilen wollen!
