What's your favorite holiday cookie? What one cookie must you have, or feel like you got cheated during the holiday season? What are your memories of the special cookies?

My favorites are the ones my mother always makes especially for me. They're almond-flavored, and she puts raspberry jam between two of them, making a sandwich cookie. They are so delicious.

Terry made something like this one year and I think of them often, an almond "crust" with raspberry jam filling type of cookie. They were delightful. I think it's been almost 16 yrs since he made them and I still remember how lovely they were.

You are probably talking about the famous Raspberry Almond Torts and they are wonderful. He hasn't made them in a few years, and probably won't have time this year. But yes, they are delightful little mouthfuls! If I could find the recipe somewhere...

As it happens, I have about a pound of crushed up almonds in the freezer... it wouldn't take much to make them into paste. Ooooooooo

Scotch Shortbread
1 c. butter
¾ c. brown sugar
2 ¼ c. sifted cake flour

Cream butter & sugar, work in flour. Chill. Roll out ¼ inch thick on lightly floured board, cut into shapes, bake slow oven 325 degrees until lightly brown.

I double the recipe, skip the rolling part and pat into a 9x11 pan, spinkle with colored sugar when still warm.

I did roll out one year. Lots of work, as if you add too much flour the dough gets tough, and not enough it's a bear to peel off to put on the cookie sheet.

Every Christmas, I make two "family" cookies -- molasses (gingersnaps), which were the cookies my maternal grandmother always made, and kolacky (Polish butter cookies with fruit filling), which are the cookies my paternal grandmother always made.

I also tend to make frosted sugar cookies (Alton Brown's recipe) cut into shapes, of course, and maybe chocolate chip or oatmeal raisin or something standard.

I made gingersnaps one year and they tasted great, but were too soft. How do you get yours snappy and crisp? Maybe it's a humidity related thing? We were having an incredibly moist and warm December that year.

There shoudl be a cookie recipe meme goin' on here. JUST SAYING.

Meaghan made sugar cookies last night and a bunch of icing, then got out the cookie cutters and made christmassy shapes, then made the icing and let Ema help. I've been *replaced*.

They were yummy tho.

Oh, yeah, the best part of it all is now I can say, "Zoe, make the chocolate chip dough! Tristan, make the peanut butter dough!" And then make them responsible for baking each different cookie. Cuts down my workload and really, I don't mind.

They won't spring for the cut out cookies, though. Drat.

It's actually snickerdoodles. For the simple reason that my grandmother made them for me and they just take me back. Made a batch for myself recently. I did share though.

I'm looking forward to making the snickerdoodles. I've been really trying to remember eating them and I just don't. Could it be I've been so deprived?

Y'know, they're not super fantastic on the scale of cookies, but they're like eating pure nostalgia for me. ;)
