Next week starts a new class on Tuesday, 'Advanced Skills Development' ... aka, independent study in advanced vegetarian cooking. Although I'm doing my best not to spend any money on unnecessary things, when my cel needed replacing I did indulge in the new Iphone. Of course, if I'd waited a bit I might have got one of the google phones now that they are out, but still, the iPhone is a pretty shiny toy. Signature Dessert
So, for my baking class we have a final project to create a signature dessert. The written portion, including requisition for ingredients and cost analysis, was due on Friday. Nutritional Testing...
Tomorrow morning will be my final for my nutrition class, after which we'll be doing nutritional cuisine cooking for the rest of the week instead of 'chalk and talk' as they call it. Although we don't have chalkboards, we have whiteboards... anyway, I have to remember ( Read more... ) -

It's dark and windy and late, and I'm just out of work and heading to the parking lot by the water tower. Nutritious!
I've moved on to the nutrition class, in which we are learning that no, you should not eat equal parts Meat / Dairy & Egg / Bread & Cereal / Fruits & Veggies (the four food groups) and no, we are not supposed to avoid fats & oils at all cost and fill up on grains (The Food Pyramid v1) ... when we tried that everybody got fat because they ate non- ( Read more... ) -

Work and School
Anyway, some good news that I haven't shared here yet, I'm a professional cook now as well as a culinary student. Since the day before Easter, in fact. My first work pretty much was helping to put on an easter buffet for some 200 or so people. I've done several other banquets since then, as well as working on the line. ... is how the chef-instructor describes the material in the last class, at least the 'Protein Fabrication' part. It's a fair assessment in many ways, although we don't start with live animals. The squeamish may not want to read inside....
