Baked Falafel
Adding this to my list of things to learn to make. I recently tried some from a Mediterranean restaurant, and it was really good but notably spicy. I hope to work out a good seasoning that I can handle. Recipe from the blog Chow Vegan (found on a Google search).

Haven't done much fun and creative on the food front. Made some Italian Vegetable Soup for my last Wednesday night turn. Other than that, working on adding more veggies to my meals. Steaming a lot of broccoli and adding it to Mac n' Cheese (better than the pre-mixed version from the store) and adding red bell peppers into scrambled eggs. ( Read more... ) -
A Good Night
It was my turn to cook for Wednesday night, so we had chili... my family's heavily tomato-y variety with mustard as the primary seasoning. Sounds strange, but it's really good (though I realize I left out the jalapenos and their juice... oops). Roasted Red Bell Pepper Hummus
Store-bought works for when I'm in a hurry (I have a container of traditional in my fridge right now), but I hope to make it myself sometime soon. I'd forgotten how much I like this stuff. We had traditional and roasted pepper varieties at a party today, and I definitely favored the pepper one.

Lord of the Rings Online finally announced a date for when the game goes Free-to-Play. September 10th. Yes, some of the neat game features are only if you pay for a subscription, but it's not required to enjoy much of the game.
Now I can wander Middle Earth again and maybe even drag a few friends in with me. Here's hoping. :) -

Peaches and Cream
I'm altering a recipe I found that called for bourbon in the cream as well (look up 'Boozy Peaches and Cream' if you like). Not really up for spending the money even for a cheap bourbon when I doubt I'll use it often. Also, due to folks with nut allergies, left out the toasted pecans.

Crunchy Parmesan Chicken Tenders
One of the dishes I'll do for Wed. night dinner this week. I'll also be doing White Beans, Asparagus, and Cherry Tomatoes. Debating on tossing in some Garlic Baked Mushrooms as well, but may not be necessary. As for dessert, going to try Peaches and Cream (see next entry). Going more dairy than normal, but it's not a bad thing.
