So Summer is (more or less) upon us, and during this time, I always crave light meals--salads and cold soups. So I have a request: What are your favorite salads and/or cold soups? I feel like trying something new. Thanks in advance!

I did a couple of searches for rengosalata recipes, but all the results keep getting returned in Italian. Awesome. Does anyone have a recipe for it that they wouldn't mind sharing with me... that's in English? Thanks.
