Meant to comment on this a while ago but...ugh, life!
Anyway, Murray Gold's music is pretty damn amazing and although he isn't my favorite soundtrack/modern composer, he's definitely up there in the top five. As for my favorite piece of music from him, according to my last.fm account it's "The Doctor Forever" although "The Greatest Story Never Told" is a close second. I love those two tracks the most so far and I'm really excited for the Specials soundtrack to come out this month (*happy dance*). If it doesn't come to the States on time I'm so ordering it from Amazon's UK site and getting it that way.
So my favorites may change once the new soundtrack comes out. Most probably. :)

I'm curious now, who is your absolute favourite? Danny Elfman for me. But then, he's mostly movies, so it's not like I get to hear him 13 weeks a year.
"The Doctor Forever"'s nice - that's the one I associate with Martha, I think. I'll have to look up "The Greatest Story Never Told", though. And the Specials soundtrack scares me just a little tiny bit, cos - I assume you've seen the tracklist? - I don't know whether I'm looking forward to getting "Vale Decem" or whether I'll play it once and never want to listen to it again! Cos it was a beautiful piece, but, well, you know.

I listened to S3 music before I even watched the episodes so "The Doctor Forever" is my "the Doctor Saves the Day!" music. Strangely he never did at the end of S3; it was totally Martha.
"The Greatest Story Never Told" is a compilation of music from the two-episode arc Silence in the Library and Forest of the Dead. Has lots of rousing bits to it. Can't quit remember what it reminds me of though...maybe "the Doctor has to make a sad choice (again) but everything is ok again"? I think about that
