My son's best friend passed away unexpectedly last January--he had an aneurysm in his aorta, which suddenly ruptured and he was gone. I want a recipe for crisp, crunchy, go "snap" when you bite them gingersnaps. I used to have one that has somehow inexplicably disappeared and I need a replacement. Everything I've found so far has the words "moist" and/or "chewy? in the descriptions...my husband and I both have the crunchy gingerbread jones and it's getting pretty bad...

I have had a serious case of the waffles jones for the past few days, gratification delayed by kitchen plumbing issues, but this morning, we have waffles. I had some ricotta cheese in the fridge-lasagna-making also delayed by the kitchen plumbing-so I mixed a bit of that in the batter along with some lemon and orange zest and a little nutmeg.
