Not too long ago I picked up some really nice tomatoes, and fresh mozzarella. My little basil plant is doing nicely, and it all added up to pizza Margherita! I spent an afternoon with an old friend teaching her to use a chef's knife, and this is the recipe I came up with for her to make that afternoon! Marinate pork in citrus and grill it (or roast) and top it with this pineapple salsa and you will have a fantastic dinner!

Guacamole can be either really bad or really good, and funnily enough until I had to make it at work (I am a cook, and have celiac.) I never knew how good it could be. I made this tonight. Not only is it GF, it's also dairy-free (other than the optional sour cream at the end, and it totally doesn't need it). Super creamy and tasty.
